Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1/2 cup creamy peanut butter
- 1/4 cup powdered sugar
- 1/4 cup heavy cream
- 1/2 cup chocolate chips for garnish
- 1/4 cup crushed peanuts for garnish
Instructions:
Preheat your oven to 350F 175C
Line a cupcake pan with cupcake liners
In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt
In another bowl, cream together the softened butter and granulated sugar until light and fluffy
Add eggs one at a time, beating well after each addition
Stir in vanilla extract
Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry ingredients
Mix until just combined
Fill each cupcake liner 2/3 full with the cupcake batter
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean
Let the cupcakes cool in the pan for a few minutes, then transfer them to a wire rack to cool completely
In a small bowl, mix together the creamy peanut butter, powdered sugar, and heavy cream until smooth
Adjust the consistency with more cream if needed
Pipe or spread the peanut butter frosting onto the cooled cupcakes
Sprinkle chocolate chips and crushed peanuts on top for garnish
